    The Urfa pepper belongs to the species Capsicum annuum, of the Solanaceae family, just like its cousins, the Jalapeno pepper and the Chipotle pepper.

    This chili pepper is the pride of Turkey. You also encounter the product under the name "Isot" or as "Urfa biber." This is because biber is the Turkish word for "pepper. Urfa is the name of the town where the chili was originally cultivated.

    What is special is the harvesting. In fact, after picking, the Urfa pepper is dried in the sun for several days. It is then packed, allowing it to sweat and acquire its smoky, hot flavor.

    Dark, almost black chili pepper: with heat, but also packed with flavors

    Urfa Biber is spicy, salty and slightly sour. Thanks to sun drying, there is also that hint of smokiness. In addition, this complex chili has notes of chocolate, tobacco and a slight raisin-like sweetness.

    How hot is Urfa chili? Scoville's scale

    More than 100 years ago, Mr. Scoville developed a scale for "spiciness" of chili peppers, based on taste tests. Meanwhile, we can measure pretty precisely how much capsaicin a particular chili pepper contains : the more of that substance a pepper contains, the hotter the chili.

    The amount of heat is expressed in Scoville Heat Units or SHUs.

    Urfa pepper is generally even hotter than Aleppo pepper, for example. With about 30,000 - 50,000 Scoville Heat Units. Like Aleppo pepper, the heat builds slowly in a dish.
