How is Ume Su made?
For our Ume Su, we harvest the plums when they are still firm and green, just as they are beginning to ripen. The timing of the harvest is crucial to finding the right blend between a mildly sour flavor and the unique fruity character.
We soak them in water for a day to make them less bitter and then brine the ume plums with sea salt. We also add shiso leaves to enhance the fruity flavors of the Ume Su. We let the mixture ferment, quietly extracting more and more moisture from the plums. That moisture is the Ume Su.
