Seasoning from Lao and Viet Nam cuisine
Ma Khaen pepper is a popular seasoning in Lao cuisine. This pepper comes from the Muang Sing province, in the mountainous north of Laos. There the women of the local Akhas tribe harvest the pepper berries by hand. Dried Ma Khaen pepper is traditionally used in a sauce with lemongrass, ginger, allspice and grilled chicken.
In Viet Nam, Ma Khaen is added to traditional dishes such as shrimp with vegetables, beef, chicken, etc.
