Our pure junipers have a spicy, sweet-sour flavour. As they release their aroma gradually, junipers work best in marinades and dishes that have to simmer for a long time.
The spicy aroma of junipers is delicious with game, sauerkraut and mussels. They also add great taste to beef, minced meat, duck, goose, pigeon, pork, lamb or dishes with apples.
Juniper berries combine well with the taste of bay leaf and parsley.
For even more flavour, you can bruise or grind the juniper berries just before use.
Key botanical for gin
Junipers are the key botanical in gin. Gin is made by distillation of botanicals with a neutral grain alcohol. By mixing gin with tonic and adding botanicals you can make the popular drink gin & tonic. Added botanicals accentuate or counterbalance the aromas of the herbs and spices in the gin.
Juniper berry tea
You can also make a strong tea from juniper berries. Pour 10 bruised berries into a cup of hot water. Leave to infuse for 10 minutes.
