We found our fermented cabbage at Klejman. Marta and Joanna are sisters and dieticians, but above all passionate fermentistas. Their path to fermentation began after being diagnosed with chronic fatigue syndrome and fybromyalgia. After many fruitless treatments, they rediscovered the healing power of fermented foods, a habit they brought with them from their childhood in Marianowo, Poland. There, their family annually fermented hundreds of pounds of cabbage into healthy, crunchy sauerkraut. Now Marta and Joanna create artisanal, natural superfoods.
To ferment this white cabbage with pineapple, they proceed carefully and manually. First, the vegetables are finely chopped and bruised until juices are released. After this, spices are added. The mixture is then placed in a sterilized jar to ferment for at least three weeks. This artisanal method - developed by the sisters - preserves the live lactic acid bacteria created during the fermentation process. This is crucial for the health benefits.

Bruising and overflowing are normal during fermentation, this is a sign of the active gases. So the fermentation is currently in full swing. So as long as the vegetables smell fresh and there is no spoilage, you can still eat them. So use your senses; smell, look and taste to judge the fermented cabbage.
At the first use, it is recommended to clean the rim of the jar and the inside of the lid.
A powerful fragrance
Fermented cabbage can sometimes have an intense odor due to the naturally present sulfur compounds and other elements found in the vegetables. These ingredients contribute to its healthy benefits and also to its unique flavor. So don't worry if you smell an intense odor when you open the jar.
Our fermented white cabbage with pineapple does not come refrigerated
Thanks to the fermentation process, they are preserved naturally, so refrigeration is not necessary. Once opened, do store this jar in the refrigerator. You can keep this for up to 8 weeks, but because of its delicious taste, we are sure it will run out even sooner.
