A peek behind the scenes
We found our fermented beet at Klejman. Marta and Joanna are sisters and dieticians, but above all passionate fermentistas. Their path to fermentation began after being diagnosed with chronic fatigue syndrome and fybromyalgia. After many fruitless treatments, they rediscovered the healing power of fermented foods, a habit they brought with them from their childhood in Marianowo, Poland. There, their family annually fermented hundreds of pounds of cabbage into healthy, crunchy sauerkraut. Now Marta and Joanna create artisanal, natural superfoods.
They work using a traditional process in which the vegetables are carefully cut, bruised and mixed with a pinch of salt. They are then placed in a sterile jar and fermented for at least three weeks. This process ensures that the flavor develops optimally and the probiotics are retained.

During fermentation, natural gases are created, so the product may fizz or overflow when opened. This is a good sign and proves that the fermentation is active. As long as it smells fresh and there are no signs of spoilage, it is completely safe to eat. Use your senses: smell, look and taste.
A powerful smell
Fermented products can have a strong smell due to the natural fermentation processes. This contributes to the unique taste and health benefits. So don't be alarmed if you smell an intense odor when opening the jar!
Storage tips
Unopened: Store in a cool, dark place. Thanks to fermentation, refrigeration is not necessary.
Opened: Once opened, store the jar in the refrigerator. This will keep the product fresh for up to 6 weeks.
