    Dukkah is originally an Egyptian spice mix - which you can use to season plan bread, but is best known for its version with ground nuts, pine nuts and seeds.The word dukka, which comes from the Arabic verb "to pound," refers to the traditional method of grinding in a mortar and pestle. Dukka can also be found in Syria, Lebanon and Palestine. The Middle Eastern cuisine that has become renowned thanks to the famous chef Ottolenghi. Every country, every region, and every grandmother has her recipe version. But all are delicious.

    Organic basic spice mix for Dukkah, without added salt

    Our basic mix is based on the Ottolenghi version and contains sesame, tomato flakes, coriander, marjoram, oregano and basil. All these ingredients are from certified organic agriculture, so from cultivation without fertilizers, pesticides or herbicides.

    Make your own delicious Dukkah

    The flavor of dukkah can vary depending on the types of nuts and spices in your mixture, but dukkah should always have a crunchy, crumbly texture.

    To 4 tablespoons of the basic spice mix, add 100 grams of nuts, kernels or seeds as desired: pine nuts, hazelnuts, almonds, sunflower seeds - the choice is yours. Chop the nuts or seeds of your choice and roast them dry for a few minutes in the frying pan. Let cool and add them to the basic spice mix. If necessary, mash the whole thing a little more in the mortar.

    Using Dukkah

    You can vary the taste of Dukkah to your heart's content by adding extra herbs and spices: cumin, sumac, cinnamon, black cumin, salt, pepper, spicy paprika, lemon zest, or even rose petals.

    Dukkah is mainly used as a dipping sauce or topping. Traditionally, you put the spiced and pulverized nut mixture in a bowl next to a bowl of olive oil, and use it to dip bread (first in the oil, then in the dukkah).

    You can also use dukkah as a topping over hummus or white bean puree (super tip!), on labnè (hangop yoghourt), over egg dishes, in a salad or salad dressing.

    Add Dukkah to lentils, combine them with roasted vegetables like cauliflower or squash. Dukka also goes with dairy products like yoghourt, cottage cheese or goat cheese.
