Ditalini - the beloved pasta form of Sicilia, made with Dutch whole wheat teff

Ditalini is a cute pasta shape made of very small tubes, it is the Italian word for "thimbles. We make this pasta from white whole wheat teff from Holland and corn flour. No eggs are used in making this spaghetti and therefore perfect for vegans.

This pasta is made from ingredients without gluten or other allergens. Both the corn flour and the teff flour are GMO-free. This pasta is therefore a tasty and healthy alternative to whole wheat or spelt pasta.

The secret of teff? Resistant starch !

Starch falls into the category of "carbohydrates. We immediately think of potatoes, corn or grains.

However, this is slightly different with teff. After all, this grain of African origin contains large amounts of "resistant starch." An indigestible carbohydrate it is. A type of starch that behaves like dietary fiber.

For a healthy colon

Resistant starch causes good bacteria in our colon to ferment the dietary fiber in teff. Sugars are fermented away and therefore not absorbed. So hardly any sugar left in your intestines, but other substances that nourish our intestines and promote bowel movement.

Moreover, the fatty acids created in the fermentation process ensure optimal absorption of essential vitamins and minerals.

The large amount of fiber in teff makes you feel satiated longer, but also allows you to exercise and exercise longer and more efficiently due to the slow release of carbohydrates.

Teff ditalini from organic farming

All ingredients of teff ditalini are from organic farming. So without chemical sprays, herbicides or pesticides.

It contains no additives at all: no preservatives, dyes, flavors, glazing agents or other additives.

Without gluten, but with a very high micro-nutrient profile

Teff contains calcium as a building material for muscles and bones, as well as magnesium and potassium. It is also markedly rich in iron. Teff also contains very little phytic acid. This also promotes mineral absorption.

The proteins in teff contain all 8 essential amino acids, and especially lysine, which are present in the right proportions.

Using Ditalini with teff

Cook this paste in plenty of salted water to boiling point. Simmer gently until the desired bite is reached (6-8 minutes).

Ditalini is small pasta that you can use in very many dishes. Not for nothing the Italians also describe it as "very short macaroni". In some areas it is also called "salad macaroni."

Try ditalini with peas and parmesan, use it in pasta salads, as a meal soup with beans, in minestrone or Greek style: ditalini with olives and feta.

Ditalini as pasta is also extremely suitable as a side dish with the barbecue.
