Sumac is a fruity and acidic berry with a deep red color. When combined with other spices, sumac adds depth. It adds a fresh and sharp lemon flavor to dishes.

In Greece, it adds a fresh note to salads and tzaziki. In the Middle East, it adds flavor to meat, fish, stews and rice. In Turkey, it is often eaten as an appetizer with sliced onions or in sauces with kebabs. It is one of the main ingredients in traditional Arabic mixes such as za'atar.
Sumac goes well with chicken, fish, chickpeas, lamb, raw onions, pine nuts, walnuts and yogurt.
You can combine sumac well with other spices such as allspice, chili peppers, coriander, cumin, garlic, paprika, parsley, sesame seeds and thyme.
Use
You can soak sumac in water for half an hour and then add the red, sour sumac water to marinades and dressings.
