Health Benefits with a Delicious Taste

Our white kimchi is unpasteurized, thus rich in live lactic acid bacteria, which may positively impact gut flora and overall well-being. During fermentation, the bacteria consume most of the sugar, so our fermented white cabbage with apple and spring onion will not affect your blood sugar levels. Just one spoonful a day gives you the recommended dose of probiotics.

It's best to consume this fermented cabbage raw, as the probiotics die when heated. You can still add it to warm dishes as a topping, allowing you to fully enjoy the health benefits. It's versatile in use, perfect as a topping in wraps, with Asian dishes, or as a snack. Tip: this variant tastes especially delicious as a topping on pea soup.

This product continues to mature and will therefore keep developing its flavor.

    Behind the Scenes

We found our fermented cabbage at Klejman. Marta and Joanna are sisters and dieticians, but above all, passionate fermentistas. Their journey into fermentation began after being diagnosed with chronic fatigue syndrome and fibromyalgia. After numerous unsuccessful treatments, they rediscovered the healing power of fermented foods, a tradition they brought from their childhood in Marianowo, Poland. There, their family would ferment hundreds of kilograms of cabbage into healthy, crispy sauerkraut every year. Now, Marta and Joanna create artisanal, natural superfoods.

To ferment this white cabbage with apple and spring onion, they proceed carefully and manually. First, the vegetables are finely chopped and bruised to release juices. Then, spices are added. The mixture is then placed in a sterilized jar to ferment for at least three weeks. This artisanal method—developed by the sisters—preserves the live lactic acid bacteria that emerge during the fermentation process, crucial for the health benefits.

    Need-to-knows for This Delicious Product

Help, my jar is fizzing or overflowing!

Fizzing and overflowing are normal during fermentation, a sign of active gases. The fermentation is thus in full swing. As long as the vegetables smell fresh and show no spoilage, they are still good to eat. So use your senses; smell, look, and taste to assess the fermented cabbage.

When first using, it is recommended to clean the jar's rim and the inside of the lid.

    A Powerful Smell

Fermented cabbage can sometimes have an intense smell due to naturally present sulfur compounds and other elements in the vegetables. These ingredients contribute to the health benefits and the unique taste. So, don't worry if you notice an intense smell when you open the jar.

Our Fermented White Kimchi is delivered unchilled

Thanks to the fermentation process, natural preservation occurs, eliminating the need for refrigeration. Once opened, however, keep the jar in the fridge. You can store it for up to 8 weeks, but given its delicious taste, we're convinced it will be consumed much sooner.
