This delightful vegetable mix is loaded with healthy fibers, vitamins, and minerals. Thanks to the lacto-fermentation process, an abundance of lactic acid bacteria is added. These beneficial bacteria are fantastic for your gut flora: they combat unwanted bacteria and aid in food digestion, which is essential for good health and a strong, natural resistance.

A major benefit of fermented foods is that almost all sugars are consumed by the bacteria during the fermentation process. This makes fermented red cabbage with carrot not only tasty but healthier too!

    Behind the Scenes

We found our fermented cabbage at Klejman. Marta and Joanna are sisters and dietitians, but above all, passionate fermentistas. Their journey into fermentation began after being diagnosed with chronic fatigue syndrome and fibromyalgia. After many fruitless treatments, they rediscovered the healing power of fermented foods, a habit they brought from their childhood in Marianowo, Poland. There, their family annually fermented hundreds of kilograms of cabbage into healthy, crunchy sauerkraut. Now, Marta and Joanna create artisanal, natural superfoods.

To ferment this red cabbage, they proceed carefully and manually. First, the vegetables are finely chopped and bruised until juices are released. Then, spices are added. The mixture is then placed in a sterilized jar to ferment for at least three weeks. This artisanal method—developed by the sisters—preserves the live lactic acid bacteria that form during the fermentation process. This is crucial for the health benefits.

    Need-to-Knows About This Delicious Product

Help, my jar is fizzing or overflowing!

Fizzing and overflowing are normal during fermentation, as these are signs of active gases. Fermentation is in full swing at this point. As long as the vegetables smell fresh and there's no spoilage, they are still edible. So, use your senses; smell, look, and taste to assess the fermented cabbage.

When first opening, it is recommended to clean the rim of the jar and the inside of the lid.

    A Powerful Scent

Fermented cabbage can sometimes have an intense scent due to naturally present sulfur compounds and other elements in the vegetables. These ingredients contribute to the health benefits and also to the unique taste. So, do not worry if you smell an intense odor when you open the jar.

Our Fermented Red Cabbage is Not Delivered Chilled

Thanks to the fermentation process, they are naturally preserved, eliminating the need for refrigeration. Once opened, however, keep this jar in the refrigerator. You can store it for up to 8 weeks, but due to its delicious taste, we believe it will be consumed much sooner.
