Le PET peut être très bien recyclé. Si l'on considère les différents emballages dans lesquels les aliments peuvent être emballés, le PET présente la deuxième plus petite empreinte écologique (juste après le verre consigné, mais bien avant le verre non consigné ou les emballages en aluminium). Pour une boutique en ligne, cependant, le verre consigné est une taxe environnementale car le verre est plus lourd que le PET, et l'expédition et la collecte créent une empreinte carbone plus élevée.

Fresh, mild, and surprisingly spicy

The combination of fennel and daikon (white radish) gives this ferment a fresh, mild flavor. Thanks to the fermentation process, fennel’s typical anise flavor becomes much milder: you’ll mainly taste a refined freshness, without the fennel overpowering the other flavors. Turmeric and fennel seeds add a subtle spicy note.

Gentle on Your Insides

Because this fennel is unpasteurized, it’s still full of live lactic acid bacteria. These are part of a live ferment that fits into a varied and mindful lifestyle. During fermentation, the naturally occurring sugars are largely converted, while the characteristic fresh and slightly tangy flavor develops.

Fermented fennel is best eaten raw to preserve the live cultures. It’s delicious as a fresh side dish, in a salad, with fish, or in a bowl. It also pairs well as a refreshing counterpoint to richer or spicier dishes.

The flavor continues to develop as the ferment matures—just like a well-aged wine or cheese.

The Craftsmanship of Two Fermentistas

This fermented fennel with daikon is made by Marta and Joanna, two sisters from Poland who have turned their love of fermentation into a craft. They first learned the craft from their family in Marianowo, where hundreds of kilograms of vegetables were turned into fermented products every year.

Their process is artisanal and pure. The vegetables are cut by hand, crushed until the juice is released, seasoned with herbs, and naturally fermented for at least three weeks. Thanks to their careful approach, the live cultures are preserved, without any additives or heating.

Good to Know: Why is my jar fizzing or overflowing?

That’s normal. During fermentation, gases are produced that can build up pressure. As long as the product smells fresh and shows no signs of spoilage, it’s perfectly safe to eat. Use your senses: smelling, looking, and tasting are the best ways to assess fermented products.

Tip: Before using it for the first time, quickly wipe down the rim of the jar and the lid.

That smell… is normal!

Fermented vegetables can have a strong odor. This is part of the natural fermentation process and contributes to their complex flavor.

No refrigeration needed (unless opened)

Thanks to the fermentation process, this product stays fresh for a long time outside the refrigerator. Store the unopened jar in a cool, dark place. Once opened, place it in the refrigerator. You can then use the product for at least 8 weeks—though it will probably be gone sooner.
