The difference between tapioca flour and cassava flour
Both cassava flour and tapioca flour are made from the cassava root. Tapioca flour is the starch of the root; cassava flour is the whole ground root. Tapioca flour provides binding and absorbs the moisture in your pastry. The result is therefore somewhat drier than when you use cassava flour.
