Pu'Er tea comes from the Chinese province of Yunnan. It is a so-called post-fermented tea. That is, the tea actually still ripens while you keep it - just like a bottle of red wine. So it gets tastier with age!
Pu'Er in the West has all kinds of spellings like Pu Ehr, Pu'er, Pu-ehr and so on. But it is always the same type of tea.

Pu'Er goes far back in history. The so-called "cake" is nothing but tea that was compressed into shapes of round "cakes". This was done in ancient China for several reasons. The cake was convenient to transport - in those days still on horseback - for barter, and later even as currency or as a distinguished gift.
Even today, Pu'Er cake tea is still a pressed tea from which you break off a piece to make tea.
Genuine Pu'Er: with a protected trade name and origin
Since the Song Dynasty, the city of Pu'Er has been one of the most important centers of quality tea in the world, and since 2003 Pu Erh has also had a protected trade name.
This means that tea can only have the name Pu'Er if it actually comes from Pu'Er. Tea from Pu'Er tends to be of particularly high quality.
Green and black Pu'Er cakes
The taste of Pu'Er is somewhat earthy and a little sweet. The leaves are rolled and shaped after harvest and then put to dry in drying rooms with temperature and humidity control. At the end of this process, the leaves are called "mao cha," literally "raw tea.
Mao cha can be treated in two ways, shou or sheng.

Sheng Pu'Er is known in the West as green Pu'Er, the leaves are pressed into a cake and then packed and stored to mature and ferment naturally.

Shou Pu'Er is known to us as black or ripe Pu'er. These leaves are moistened and then covered to undergo a months-long fermentation process. In that process, all kinds of microbes and enzymes are stimulated, which support digestion. After that process, the tea leaves are pressed into cakes.

Break off pieces of the cake :

per cup approximately 3 grams
Pour over with water at 80°C, and drain immediately after 10-15 seconds
Refill with 80°C water and leave to infuse for 2-3 minutes
