    Vinegar is essentially a combination of acetic acid and water. Together, they go through a two-step fermentation process.

    Everything starts with a yeast culture and liquid sugars or starches from plant foods: for example, from fruits (think grapes, apples, citrus...), whole grains, potatoes, rice and so on. In principle, you can make vinegar from almost any plant product, including black tea leaves.

    Twice fermenting

    The whole of the liquid used ferments into alcohol in the first step.

    In a second step, the alcohol is exposed to oxygen and acetic acid bacteria to ferment one more time and become vinegar. The alcohol - and usually all the sugars - are gone and the acetic acid content in the liquid will rise to a level 4% to 8%. Then it is vinegar!

    Depending on the source (such as apples for apple vinegar, grapes for wine vinegar,...), vinegars also contain vitamins, mineral salts, amino acids and polyphenolic compounds.

    To make our kombucha vinegar, we use black tea as a base, organically grown sugar and kombucha. Logical, because black tea is already a fermented product in itself. And kombucha is already a naturally fermented beverage based on kombucha enzyme cultures. We just need the right yeast culture to start up first fermentation, and the alcohol sugars are fully converted in the second fermentation. The result is an extremely refined kombucha vinegar that is extremely smooth and does not have the overwhelming acidic impact of other vinegars.
