    Our dry yeast is selected on highly active yeast strains, which ensure rapid fermentation of the dough. The dry yeast is of the same quality as fresh baker's yeast, but has a much longer shelf life, lower weight and easier dosing than fresh yeast. When the yeast comes into contact with moisture, the yeast cells become active.

    Not to be confused with instant yeast!

    Our dry yeast, on the other hand, is real fresh baker's yeast but dehydrated. All the water is extracted from the fresh yeast, so the fresh yeast becomes dry and the yeast cells go to sleep as they were. By adding water to the dry yeast again, you get 'fresh' yeast again, and the yeast cells immediately become active again. You bake like a real baker.

    When we talk about dry yeast, by far most people mean instant yeast, the packets of usually 7 grams of grains that you add directly to the flour. Instant yeast is an industrially developed solution.

    How to use real dry baker's yeast

    Dry yeast is easy to use, but needs to activate in lukewarm water.

    Without a recipe, use 8-9 grams of dry yeast for 500 grams of flour. Dissolve the dry yeast in 45 ml lukewarm water (35-38 degrees) and if necessary add a pinch of sugar (about 2 grams).

    Stir gently and leave to stand for 8-10 minutes. The yeast becomes as fresh, active yeast again. Add to the flour (make a dimple) and then knead the dough to the recipe.

    Convert recipes

    • Replace 30g fresh yeast with 10g Pit&Pit baker's yeast

    • Replace 7g instant yeast with 9g Pit&Pit baker's yeast

    • Replace 11g instant yeast (one sachet) replace with 15g Pit&Pit baker's yeast

    Tip: if you use salt in the recipe, make sure it never comes into direct contact with the yeast.
