Use tamarind or assem
Tamarind is widely used in Indian cooking, as a meat softener or in chutneys, sauces or sambals. It is part of the well-known Worcestershire sauce. Tamarind has a slightly sour taste and aroma.
Usage
Dissolve a 2 cm piece of tamarind in a few spoons of hot water. Let this stand for a few hours and then strain it. The tamarind water is ready for use.
