    The rare Andaliman pepper bushes grow wild in the jungles of Sumatra. The vines with pepper berries are harvested by hand. Then they let these tendrils dry in the sun in wicker baskets. During the drying process, the berries lose about 90% of their weight. For 1 kilo of Andaliman pepper you need a lot of fresh pepper berries.

    Use

    Andaliman pepper is excellent with fish, seafood, chicken, curries, stews, salads, exotic fruits and Asian dishes. Combine with chilies in spicy salsas.

    You can use the peppers whole in stews and chutneys. If you want to use the pepper in delicate dishes, it is best to break the woody skin of the pepper and use the grains inside. Add Andaliman pepper, whole or ground, preferably at the end of cooking for optimal flavor retention.
